Banyuls-sur-Mer
Banyuls de la Marenda in Catalan. About 4,500 inhabitants. Has an incredibly beautiful historic city center, and is alive all year round. During the mild winter months when it can be around 15 degrees Celsius, people like to flock to the outdoor cafes.
The rocky coast invites you to take nice walks, and a given excursion destination is the old dynamite factory (yes, Alfred Nobel has something to do with it: https://www.jaimemonpatrimoine.fr/fr/module/81/1335/l-anse-de-paulilles-un-site-explosif-) in Paulilles between Banyuls and Port Vendres.

Cotlliure in Catalan. About 3,600 inhabitants. Extremely popular and picturesque little artists' village by the sea. Crowds of tourists during the summer months. Quiet and nice in the winter, and lively all year round.

Argelès-sur-Mer
Argelers de la Marenda in Catalan. About 10,800 inhabitants. The city has no fewer than five Natura 2000 areas and is known for its six-kilometer-long beach, and the beautiful promenade.

Canet-en-Roussillon
The second largest city in the Pyrénées-Orientales, and also the coastal city closest to the capital Perpignan. Just over 13,000 inhabitants.
There are two Natura 2000 areas here, and the city has both a historic city center and a "beach resort". Right next to a large etang (or lagoon) that invites you to take nice walks.
